Gogi Berry Balls (superfood cookies)

This is truly one of favorite recipes. It will give you energy and it high in nutrients. I made a batch of these when I ran Ragnar and it kept me going. I also eat these when I am pregnant because they taste so good and keep me going throughout the day.

2/3 cup agave nectar
1/4 soaked goji berried
1/2 cup cacao nibs (I use chocolate chips)
1/4 cup walnuts or pecans
1/2 cup raisins
10 pitted dates
5 dried black mission figs
1/4 cup sesame seeds
1/4 cup sunflower seeds
1 tsp vanilla
1 tsp cinnamon
1/2 tsp sea salt
1/4 cup cocoa or carob powder

1 cup unsweetened coconut

Add all ingredients, except coconut, in a food processor and process until it is as creamy as you can get it. You can add a little water if necessary but don't add too much or it won't roll into balls. Next roll in coconut and chill in fridge or freezer for 30 min before serving.

Energy Bar (Yummy Snack)!

A friend of mine, who is also my visiting teaching partner, shared this recipe with me. She competes in bike rides and use this bar instead of Goo or power bars from the store. We like it for a snack and after a good run. My husband said it was addicting because of the rice puff crunch!

Energy Bar

Slightly warm these ingredients in a pan until they become mixed and more liquid:

1 cup of peanut butter, almond butter or cashew butter
3/4 cup of honey or agave
2 tsp vanilla
1/4 tsp salt
1/2 tsp almond extract (optional)

Mix in blender or food processor and add to above:

1 1/2 cups sunflower seeds, almonds, or walnuts
1 cup dried fruit (apples, apricots, dates, raisins, craisins, or strawberries for example)
4 cups brown puffed rice

Mix all ingredients together and press into a 13 x 9 inch pan. I put plastic wrap over it and use a a cup to make it really smooth and compact. Refrigerate until firm.

You can cut into squares and wrap it individually if you want energy bars on the go. My family eats it out of the pan but I plan on taking it to snack on during the Ragnar.

Best Ever Pumpkin Cookies

Cream together:

1 ½ cups oil

2 cups honey (or sugar)

3 Tbs applesauce or (3 eggs)

Add:

1 Tbs vanilla

1 Tbs baking soda

1 Tbs baking powder

1 ½ tsp salt

1 Tbs cloves

1 Tbs cinnamon

1 30 oz can pumpkin

7 ½ cups flour (I use whole wheat flour)

12 oz chocolate chips

Mix all together and bake at 400 degrees. Makes about 6 dozen cookies! But I freeze some if we don’t eat them first. You can always ½ the recipe and freeze the leftover canned pumpkin.

Monster Cookies

These are pretty tasty and have a lot of ingredients :)

6 eggs
2 1/4 cups brown sugar (or 2 cups honey and 2 TBS molasses)
2 cups white sugar (or 1 1/2 cups honey)
1 1/2 tsp vanilla
4 tsp baking soda
1 cup softened butter/coconut oil
3 cups crunch peanut butter
9 cups oatmeal (10-10 1/2 if using honey)
1 1/2 cups chocoalte chips
1 1/2 cups candied chocolate (M&Ms) though I successfully just use more chocolate chips

Mix the first 7 ingredients (up to and including the peanut butter) add oatmeal, candy and chocolate chips and mix.

Drop onto cookie sheets with lots of space between. If the dough is too sticky you can either refrigerate it or add extra oatmeal.

Bake at 350 degrees for 13-15 minutes.

Oatmeal cookies

I like this recipe because it has lots of oats in it. I have another one I love that is gluten free, but this isn't that one. I also don't know where this recipe came from (has been passed around the family) but we sure enjoy it! I will just post what I use as opposed to what the original recipe uses, because I haven't ever made the original recipe

1 cup butter/coconut oil (both are great!)
1 1/2 cups honey
4 eggs (I have been known to use up to 6)
2 TBS molasses
4 cups whole wheat flour
1 tsp baking soda
2 tsp vanilla
1-2 tsp cinnamon (optional)
5 cups oatmeal
raisins/nuts/chocolate or carob chips (optional)

Cream butter/coconut oil and honey together and add the eggs. Then add all the ingredients up to and including the molasses. Then add the vanilla and cinnamon. Add the oatmeal and then other additions you choose. I use up to 2 cups combination of any of them. We love chopped almonds and carob/chocolate chips. Bake at 350 for 10 minutes on a lightly oiled cookie sheet. You don't need to oil it if you use non-stick pans.

Enjoy! Miss Melanie
